General recipe for all muffins

Ingredients

To be added at the very end - after brewing, before baking

Steps

  1. Mix brown sugar, oil and applesauce
  2. Add vanilla, salt, baking powder and oatmeal (can be replaced with 1/4 cup more flour)
  3. Add the flour (ideally sifted to avoid lumps) and finally the filling of your choice (see notes for suggestions)
  4. Before putting in the oven, stir in the vinegar without stirring too much, just fold the dough with a spatula a few times
  5. The consistency of the mixture should be thick but flow slowly. If necessary, adjust with a little soy milk if it is too thick / difficult to brew
  6. Always coat the muffin pan with oil or muffin boxes.Cook approx. 25 min at 350F (toothpick must come out clean from the center of the muffin)
  7. Let cool a little before unmolding (about 15 minutes)

Notes

Bananas and chocolate: add 1 banana at the start and 1/2 cup of chocolate chips at the end Blueberries: add 1/2 cup frozen blueberries at the end Raspberries and yogurt: add 1/2 cup raspberries at the end and replace the apple sauce with soy yogurt Maple and pecans: add 1/2 cup chopped pecans and replace the sugar with 3/4 cup maple syrup Apple and cinnamon: add 1 or 2 apples, cut into small cubes and 1 tbsp. cinnamon powder Double chocolate: add 1/4 cup of unsweetened cocoa at the beginning and 1/2 cup of chocolate chips at the end Carrots: add 1 cup grated carrots at the beginning and 1 tbsp. cinnamon
