  1. Cook the eggplant in the oven at 400 F for about 35 to 40 min, sting a few places to prevent it from exploding (possibility to do it in the microwave if in a hurry)
  2. Heat olive oil in a large skillet, fry the onion
  3. Add spices, garlic, ginger and a little water to prevent it from sticking
  4. Add the diced tomatoes and cook for a few minutes
  5. Add crushed eggplant and simmer on low heat for 10 minutes
  6. Season to taste, serve with fresh coriander on top and rice or naan bread
