Heat a large skillet/wok over medium-high heat with half the oil, Meanwhile, cut the tofu block into cubes
Fill a dish with the cornstarch (1/2 cup) and add the tofu. Put the lid and shake well to coat the pieces tofu
Remove from the dish to put in half oil when hot, repeat the previous step with the last 2 slices of tofu and the last portion of oil, cook in the pan for about 10 minutes or until golden brown (do not overcook) !)
While frying the tofu, wash and cook the rice in a rice cooker or a pot and combine the following ingredients in a blender; cloves of garlic, piece of ginger, cornstarch (2 tablespoons), soy sauce, rice vinegar, ketchup, maple syrup, salt, sriracha and vegetable broth until it makes a smooth sauce
Once golden, remove the pieces of tofu and drain the extra oil on paper towels
Wipe the pan clean from its cornstarch and oil residue and heat again over high heat
Pour in the sauce and stir until thickened, then add the broccoli and tofu, coat well and allow to warm, stirring often.
Toast the sesame seeds in a second pan, then wash and chop the green onions
Serve the tofu and broccoli sauce over rice and garnish with sesame seeds and green onions!
Notes
For our French friends who generally have less sweet tooth than Quebeckers, you can reduce the maple syrup to 1/3 cup ... see 1/4 cup for those who prefer frankly a taste more sour than sweet
